
Ingredients:
2 pounds of new potatoes (the little small ones are the best)
fresh cilantro
3 garlic cloves
3-4 seeds of pepper
1 coffee spoon of ground cumin
8 tablespoon of olive oil
1 tablespoon of red wine vinegar
coarse salt
Wash the potatoes thoughtfully and place them in the pot, add water but don't cover them up(pic #1). Then add coarse salt (for 2 pounds, 3 tablespoons). MIx it all well ad put the stove on medium. when the water stars evaporating ad the potatoes turn white (pic #2), introduce a log stick in them to make sure they are well cooked in the inside, remove the water ad put them back in the fire for another couple of minutes. The should look white and wrinkly (exactly what "arrugas" means)

Cut the cilantro really small with a scissors and put in a mortar (pic #4)
Add the garlic, ground cumin, pepper, 1 coffee spoon of coarse salt, olive oil and vinager (pic #5). Ground it all together and mix it good (pic #6). If you have cilantro seeds you might add some too (5-6).
Presentation:
Cut the potatoes in half and spread some sauce over them. Buen provecho!
